Serves 10 servings

To make the Clementine Syrup (yields 750ml)

300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar

To make the Drink (yields 850ml, serving 10)

400ml good quality vodka
100ml dry gin
150ml peach-flavored liqueur
200ml citrus syrup (as made above)
Whole cranberries, as a garnish
Mandarin essential oil, to finish

Method

Making the Cordial: Put the listed components into a pan, bring to a light boil, agitating so the sugar melts. After that, remove from the burner and let it to reach room temperature entirely. Decant into an sterilised bottle, seal and refrigerate it chilled, it can be stored for around four weeks.

To make Batch Mix: Combine all the liquid ingredients into one big jug, let it rest for one hour, then filter it preferably using cheesecloth, so it's completely strained.

When ready to serve: Pour 85ml from the cocktail base into your mixing glass packed with ice, and agitate gently for a minute until cold. Strain into a frosted cocktail glass or a similar vessel, garnish with a few cranberries and complete it by giving it a light spray with the mandarin essence over the drink.
